Apple Sauce Carrot Cake
It has been snowing all day in my corner of the world, so my kids and I have baked healthier Apple Sauce Carrot Cake. I found the recipe at Spark People, and it is the first time I was making it. As a matter of fact, it was the first time I was using Apple Sauce in the recipe. I like it! ![]()
145.8 Calories and 5.7 g of Fat per slice (recipe makes 16 servings)
Those nutrition facts are not accounting the half cup of chopped walnuts I added to the batter to make the cake more nutritious. It adds 25 calories per slice of cake, but I made 24 servings instead of 16 and that gave me 114 calories per slice and 5.5 g of Fat, walnuts included. It is all good! ![]()
I will certainly will make that cake again, because it is DE-LI-CIOUS!
My little picky eaters loved it, and we sure had fun baking together!

NB: For those - like Mister Tricotine - who miss the frosting, topping a slice of cake with Cool Whip does the trick without packing calories and fat. ![]()

Isn't it funny how participation makes a child suddenly enjoy something 'healthy'.. :-)
