I had completed 74 projects in 2006 and that was my record ever. I thought I would reach a hundred this year, but I didn't.  I "only" completed 74 projects... again!

My actual first 5K

A few weeks ago, I thought I would run my first 5K in May 2008. Well, it is going to be sooner than that. last night, I have signed up for another 5K Run and it is going to be in March. brrrrr

Oh boy, it is in... 79 days!!!

I might or I might not be completely ready, but what matters the most is for me to see how it is to run a race; and I am sure I will be less nervous in May. 

And in June too.

Hum... Yes, I have also signed up for another race in June.
22 lbs lighter, and I feel like I could lift mountains!

Food focus: Edamame (soybeans)

A while ago, I borrowed from the library "Becoming Vegetarian".  I liked it so much, that I got to get the new updated version of Versanto Melina and Brenda Davis' book! And by curiosity, I also got "Becoming Vegan" by the same Authors.

In those books, I am learning a lot every day about healthier foods and plant-based diet, and I was especially intrigued and interested in trying Edamame also known as "soybean", and often referred to as the "power food". 

Now, I knew that Tofu and other soy products were made with soybeans, but I had never thought that the soybean itself could be consummed as a vegetable too... DUH me!

A little trip to the Nature Food Store (my local grocery store does not hold that product), and I was able to get me some frozen soybeans, in pods and shelled.

I was looking for fresh, but couldn't find any...

For my first try, I chose to start with the soybeans in the pod. I steamed them for seven minutes, and served them with wild blend brown rice and cubed fried tofu - yes, I finally found the way I like my tofu!

I was so busy oooh & aaaah-ing over my lunch, that little Tricotines wanted to try soybeans too, and they had lots of fun squishing each of them out of their pod. Then, they asked for more!

They also insisted on trying the little "marshmallow cubes", and guess what? 
My babies like... TOFU!

Mister Tricotine is going to "hate" me...

Colorful Cauliflowers

After posting the photo, I was asked if those were real or "photoshopped"...

It is true that those colorful Cauliflowers look too good to be real - or natural - but THEY ARE, and their vibrant colors don't even fade in the cooking process! Another of Mother Nature's wonders. 

I know, I am easily amazed, aren't I?

Anyway. I had them for lunch today - along with Wild Blend Brown Rice and a Veggiburger + Salsa (not on the photo) - and let me tell you that those cauliflowers taste just the same as their white fella. 

I like to eat my cauliflowers (no matter what color) steamed and warm, topped with a dash of (extra-virgin, first cold pressed) olive oil and lemon juice in my plate. YUM! :-)

And guess what?  My two-years old who usually doesn't like to eat the white cauliflower, literally LOVES the orange one! LOL
